Prime Rib Eye Roast

Simple is best for this lovely cut of meat that can come out mouth-wateringly delicious.

Allow the meat to come to room temperature for about 1.5 hours before cooking. Unwrap and rub the meat with salt and a little olive oil while it is sitting out in the kitchen.

Sear the meat on all sides. Use a heavy bottom skillet over medium-high heat with a little olive oil in the pan. Use tongs and rotate the roast, searing each side for about a minute.

Preheat oven to 250oF. We use convection roast on our oven.

Put the meat on a rack in a baking pan and place it in the center of the oven. Cook it slowly until a meat thermometer reads 130 for medium-rare. It will probably take 1.5 to 2 hours. Check on it every 15 minutes.

Remove and let the roast rest for 15 minutes before slicing.
