Pasta Salad Recipe

  • 2 cups corkscrew pasta
  • 6 cherry tomatoes, quartered
  • 1/3 cup chopped sour pickles
  • 1 tart apple, diced.
  • 1/2 cup broccoli
Dressing:
  • 1/4 cup olive oil
  • 2 tbsp. rice/white vinegar
  • 1 tbsp. lemon juice
  • 2 tsp. mustard
  • garlic and pepper to taste

Cook the pasta al dente and drain well. Also blanch the broccoli until it is just tender.

Chop or dice tomatoes, apple (core, but do not peel), and pickles.

Mix all the ingredients together in a bowl and toss with dressing.

Cover and chill for several hours to allow flavors to blend.
