Meat Loaf

  • 4-5 oz. salad croutons (or similar quantity of seasoned bread crumbs)
  • 2 lbs ground beef (or a mix of ground beef, ground pork, and ground veal)
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2/3-1 cup tomato juice
  • basil
  • oregano
  • pepper
  • salt

Any variety of seasoned salad croutons will work fine. Put approx. 5 oz. of croutons into a large bowl and crush them by hand (or place in a baggie and squeeze to crush). You just want to break them up into small pieces, not pulverize them.

Mix in spices, egg, tomato juice and cheese and stir well.

Add ground beef, mix by hand and shape it into a loaf approximately 3 inches tall x 5 x 9.

Place loaf into a glass baking dish. It can be useful to place a small rack under the loaf to raise it approximately 1/2 inch off the bottom of the pan. A lot of fat/juices will collect during the cooking process. The meat can sit directly in these drippings or be raised above with a rack.

Bake at 350o F until done. Approximately 1 hour and 15 min.

Serve with mashed cauliflower and brown gravy.
