Ham and Potato Soup Recipe

Ingredients:

Put diced potatoes in a cooking pot and add approximately 3 cups of water. You will save this cooking water and add it to the soup pot later, so use just enough to cover the potatoes. Add 1-2 bouillon cubes for flavor. Bring water to a boil and cook long enough for the potatoes to be tender without being mushy, approximately 15 minutes.

Transfer cooked potatoes and water to a larger soup pot or crock pot. Add ham and half & half to the crock pot, stir and begin heating all.

While potatoes are boiling, chop the onion.

Melt butter in a heavy bottomed skillet. Saute the onion for a few minutes until the onion is just beginning to turn golden.

Add the flour to the onion and butter mixture and cook for 5 minutes over medium heat. This will be a very thick paste. Stir occasionally to prevent burning.

Gradually stir in approximately 3 cups of liquid **. This liquid can be chicken or turkey stock if on-hand, else use water with chicken bouillon. Stir frequently and cook over medium heat for approximately 10 minutes. The sauce should be thick and bubbly.

Transfer the thick sauce into the crock pot with the other ingredients, stir and adjust seasoning. Ham is usually pretty salty, so be cautious about adding extra salt.

Soup can be served as soon as it is hot or allowed to simmer on low in the crock pot until later.
