Riceless Fried "Rice"

Ingredients:

  • 2-3 tbsp. onion, minced
  • 2-3 cloves chopped garlic
  • 1/2 to 1 whole head cauliflower (depending on size)
  • 3 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • 1/2-1 lb. pre-cooked meat (any leftover will do), chopped
  • 8 oz. mushrooms, sliced
  • 3-4 eggs

Grated cauliflower has the texture of rice and works perfectly as a low carb substitute in fried rice.

We usually use leftover beef skirt steak, but any cooked meat - chicken, pork, shrimp, turkey, or a mixture will work well in this recipe.

Cook mushrooms in butter and set aside with the cubed meat to be added to the pan later.

In a wok or large flat skillet, heat enough oil to cover the bottom. Fry minced garlic and onions for approximately 1 minute.

Add grated cauliflower and fry for 4-5 minutes, stirring constantly.

Add pre-cooked meat and mushrooms. Stir to mix well and brown a bit.

Push everything to the side of the wok to make room for the eggs. Scramble eggs in wok and then fold them into the "rice" mixture.

Add soy sauce and sesame oil. Mix and serve.
