Ginger Beef Stir-fry

This is an easy and quick meal. Perfect for a quick weekend meal.

Prep all the ingredients before getting busy with the wok.

Add a little cooking oil to a wok or large frying pan and set your stove burner as high as it goes (preference for cooking with gas). Using appropriate sized wooden wok utensils is a great help.

Put the meat into the wok and stir-fry 3-4 minutes until pieces are nicely browned. Add a little pepper and salt if desired (though the dish will get salty from soy sauce so we generally skip adding additional salt). Remove meat from pan and set aside on a plate, leaving cooking juices in the wok.

In the same pan/wok, add garlic and ginger and cook for about 30 seconds or until fragrant. Add the scallions, bok choy, hoisin and soy sauce. Cook 2-4 minutes until the vegetables are just softened. Add tofu during the last minute.

Return beef to wok and stir till everything is heated through. It's now ready to serve.
