Strawberry Kiwi Poppy Seed Dessert Salad

Ingredients:

We sometimes serve this as a side dish for a meal, but it is pretty sweet and seems more like a dessert salad. Quantities are very approximate. The above makes enough for two small dessert salads. Adjust quantities as needed.

Remove stems and cut strawberries in halves or quarters depending on how big they are.

Peel the kiwi and cut it into small pieces.

Chop approximately half of an endive. You can substitute some cabbage or vegetable of your choice. I like something with a bit of crunch and endive is a nice small size. I have also added small chunks of jicama.

Combine the above ingredients in two small bowls.

Make a small quantity of dressing with oil, vinegar, sugar and poppy seeds. Whisk well and spoon over the salads before serving.
