Spinach with Raisins and Nuts

Ingredients:

Quantities are very approximate. The above makes enough for two servings. Adjust quantities as needed.

Preparation is simple and cooking time is quick. Soak the raisins in hot water for a few minutes while preparing everything else.

Chop the garlic into small pieces. Also chop the nuts if desired. I prefer to use unsalted soy nuts. Pine nuts will work just as well.

Put some olive oil in a non-stick frying pan and heat on medium-high. You want enough oil to both saute the garlic and nuts with some extra to coat the spinach when it is added to the pan later.

Saute the garlic and nuts in the olive oil for a few minutes. Garlic will begin to turn golden and become fragrant. Add the spinach leaves and stir to coat spinach with hot oil. Cook for a minute or two, but avoid over-cooking. The spinach leaves should retain some of their shape, although the volume will reduce. Drain raisins and add to the mixture just before serving.

Serve immediately, add salt and pepper if desired.
