Roast Chicken Recipe

This is extremely easy to make and requires very little effort.

The day before, mix dry ingredients in a small bowl and rub the exterior (inside and out) of the roast chicken. Place it in a large baggie and refrigerate over night.

Five hours before dinner. Place the chicken in an uncovered roasting pan, breast side down, on a rack. Cook in a 250o F oven for 5 hours.

That's it, no basting needed. The chicken will probably be done in less than five hours, but it doesn't dry out quickly due to the lower cooking temperature and can be left in the oven until you are ready for it.
