Ingredients:
Pound the meat briefly before marinading.
Chop shallot and garlic and combine with the remainder of the ingredients in a small bowl.
To marinate: use a large sealable zip-lock bag. Place the skirt steak pieces in one at a time and spoon a bit of marinade over each piece. Fold meat as needed to fit into the bag.
Seal bag and turn to ensure all meat is coated. Place in the refrigerator and marinate for 1-4 hours.
Cook meat on the grill for 4-5 minutes per side for medium rare-doneness. Discard marinade.
