Eggs and Avocado Salad

Ingredients:

Boil eggs. We prefer 7 min hard boiled. Remove eggs from hot water, remove shells and slice into wedges.

Peel and cut avocado into cubes.

Chop chives.

Whisk together a simple dressing of olive oil and lemon juice, add chopped chives and salt.

Gently combine all ingredients to avoid the yolks falling out of the egg whites.

Serve, optionally sprinkly some sunflower seeds to give the dish a bit of crunch.
