Eggs and Avocado Salad

Ingredients:

Boil eggs. We prefer 8.5 min hard boiled. Remove eggs from hot water, remove shells and slice into halves or wedges.

Peel and cut avocado into slices.

Chop chives.

Whisk together a simple dressing of 2 tbsp. olive oil plus 2 tbsp. lime juice, add chopped chives and salt.

Optional additions include sliced persian cucumber, salmon, and/or blue cheese.

Gently combine all ingredients to avoid the yolks falling out of the egg whites.
